Acai bowls are one of my FAVORITE breakfasts or healthy snacks. They’re healthy, filling, full of nutrients, and tastes like a dessert! This is my go to acai bowl recipe – I hope you like it as much as I do!

Ingredients

  • 1/2 frozen banana
  • 1 cup frozen berries
  • 1 tsp acai powder (or you can use the frozen acai blend if you can find it!)
  • 1 tablespoon of chia seeds (adds lots of fibre which help keep you full!)
  • 1 cup of milk of choice (I use almond milk)
  • Toppings of choice – granola, chia seeds, cacao nibs, fruit, nuts, seeds, coconut, etc.

METHOD

  1. Put the frozen banana, acai powder, chia seeds and milk in a blender and mix well until it’s all combined.
  2. Then add the berries and mix up again.
  3. Pour the mixture into a bowl, and add your favorite toppings!

Tips For Making The Perfect Smoothie Bowl

To make sure you get a sweet and creamy smoothie bowl, use ripe bananas. Peel the banana, and then cut it up into 6-8 small pieces. Put the banana pieces in a small plastic bag and put in the freezer overnight. I like to keep a few frozen bananas in the freezer at all times :)

Go easy on the toppings. Adding foods such as honey, nuts and nut butters can increase the calories significantly. You can still use these, but try to keep toppings to a minimum to avoid eating a super high calorie meal.

This is my favourite homemade granola recipe. I sometimes mix it up and add other ingredients, but this is my go to. You can add anything that you want!

Ingredients

  • 1 1/2 cups gluten free oats
  • 1 cup buckwheat
  • 1 cup crushed almonds
  • 1/3 cup crushed macadamia
  • 1/3 cup cashews
  • 1/3 cup white chia seeds
  • 1 cup coconut flakes
  • 1 cup dried fruit
  • 3 tbsp honey (or maple)
  • 2 tsp vanilla

Ingredients

  1. Preheat oven to 120C / 250F.
  2. Mix all dry ingredients in a bowl (except fruit).
  3. Heat the honey and vanilla in microwave for 20 seconds. Pour over dry ingredients and mix well.
  4. Bake for 1 hour, rotating the tray half way through.
  5. When cooled, stir through the dried fruit.

Store in an airtight container. Makes about 1kg.

Green omelette – the perfect breakfast!

Ingredients

  • 1 whole egg
  • 2 egg whites
  • 1/4 cup edamame (soy beans)

Choc raspberry protein pancakes – the perfect post workout breakfast!

Ingredients

  • 1 ripe banana
  • 1 scoop Shape Health vanilla protein superfood
  • 1/3 cup oat flour
  • 2 tbsp cacao powder
  • Almond milk, to consistency

Method

  1. Combine first 4 ingredients in a bowl and mix with a hand held blender.
  2. Add almond milk 1 tbsp at a time. The batter should be thick so the pancakes are fluffy. If you prefer thinner pancakes, add more almond milk.
  3. Cook over a medium heat, flipping once.
  4. Serve with fresh raspberries and healthy chocolate sauce made from 1 tbsp maple and 1 tbsp cacao powder.

Makes 3 medium sized pancakes.
