I love making my own healthy homemade protein bars – they taste SO much better than the processed kind and are much healthier for you. These are chocolate peanut butter flavour cuz why would you want anything else! ;)

Ingredients (base)

  • 2 cups almond meal / gluten free oat flour
  • 2 scoops chocolate protein powder (can use vegan)
  • 4 tablespoons peanut butter
  • 2 tablespoons PB2 powder (can omit from recipe)
  • ¼ cup almond milk
  • 3-4 tbsp honey or sweetener
  • ¼ cup dark choc chips
  • Pinch of salt

Ingredients (topping)

  • 1/2 cup dark choc chips
  • 1 tablespoon coconut oil, melted

Note: you could make a healthier chocolate topping with cacao powder, coconut oil and a sweetener, but I was feeling naughty :)

Method

  1. Blend up all the base ingredients (except choc chips) in a food processor, or you could use a hand blender. If you don’t have oat flour, just blend 2 cups of oats in the blender and it will turn into oat flour :)
  2. Stir through choc chips.
  3. Press into the base of a lined caked tin.
  4. Melt choc chips and coconut oil in microwave for approximately 1 minute.
  5. Stir thoroughly and then pour over base.
  6. Place in freezer to set for 2 hours.

OK the photo does not do this recipe justice. It is my favourite and I’ve made it about 4 times in the past few weeks haha. My husband said it tastes like a Nutella slice and my mum said it tastes like ice cream (it’s best kept in the freezer). It is seriously the best!! I hope you make it :)

Here is the recipe for this amazing chocolate peanut butter slice.

Base Ingredients

  • 1 cup nuts (I used almonds)
  • ½ cup shredded coconut
  • 10 fresh dates
  • 1-2 tablespoons coconut oil or water
  • Pinch of salt

Chocolate Filling Ingredients

  • 8 fresh dates
  • 1 can coconut milk
  • ¼ cup cocoa powder
  • ¼ cup chocolate protein powder (or you can leave this out)
  • ¼ cup coconut oil
  • ¼ cup natural peanut butter
  • ¼ cup honey or sweetener
  • Pinch of salt

Peanut Butter Topping Ingredients

  • ½ cup natural peanut butter
  • 1/3 cup honey or sweetener
  • 1/3 cup coconut oil
  • Pinch of salt
  • 1 teaspoon vanilla

Method

  1. Put nuts into blender and blend.
  2. Then add dates and mix again.
  3. Then add coconut, coconut oil and salt and blend up really well. It will still be a little crumbly but will stick together when you press it.
  4. Line dish with baking paper and press mixture into the dish.
  5. Mix the dates, coconut milk and cocoa in the blender and blend well so the dates are all blended.
  6. Then add all the remaining filling ingredients.
  7. Pour on top of base and then put in freezer.
  8. Mix all topping ingredients in the blender and then gently spoon over the filling.
  9. Keep in the freezer overnight and then cut the next day.

I like to cut mine into tiny pieces (about 2cms) and then keep it in the freezer and take it out a few minutes before eating it.

This is seriously the BEST cake I’ve ever made, hands down! It is a little bit of work, but it 100% worth it. My sister first made it for me for my birthday because she knows chocolate peanut butter is my absolute favourite flavour :) It was so good that we made it again for Easter. I thought I would share the recipe now because it would be amazing for Christmas!

It is gluten, dairy and refined sugar free. But of course it still has a fair few calories so you need to exercise portion control (if you can!). Here is the recipe for this amazing chocolate peanut butter cake. Enjoy! xx

Ingredients (Chocolate Cake)

This part of the recipe is from Teresa Cutter

  • 1/2 cup cacao powder
  • 1/2 cup coconut flour (or flour of choice)
  • 1/2 cup honey (or sweetener)
  • 6 eggs
  • 1/2 cup coconut milk
  • 1/2 cup olive oil
  • Pinch of salt
  • 2 tsp baking powder

Ingredients (Peanut Butter Frosting)

  • 1/2 can coconut cream, chilled overnight
  • 4 tablespoons peanut butter
  • 4 tablespoons honey (or sweetener)
  • Pinch of sea salt

Ingredients (Chocolate Ganache)

  • 1 block of 75% Lindt dark chocolate
  • 1/2 can coconut cream, chilled overnight
  • 2 tablespoons coconut oil
  • Pinch of salt

Method

  1. Preheat oven to 160C / 325F.
  2. Put all dry ingredients into a large mixing bowl. Combine well.
  3. Add all wet ingredients and combine well using hand held beaters (or a whisk).
  4. Pour into a lined baking tin. I used a round baking tin about 22cm in diameter.
  5. Bake cake for 45 to 60 minutes, or until it is completely cooked through. Depending on the size of your tin (i.e. if it is smaller and the cake is thicker), it may take a little bit longer.
  6. Allow to cool completely, and then cut cake in half.
  7. While cake is baking, make the peanut butter frosting and chocolate ganache.
  8. To make the peanut butter frosting, scoop out the coconut cream from the top (leave behind the coconut milk). Put into a bowl and blender with hand beaters until fluffy.
  9. Add remaining ingredients and mix again.
  10. Place in the fridge until cake is ready to be iced.
  11. To make the chocolate ganache, heat coconut cream over a low heat in a saucepan.
  12. Remove from heat and add the chocolate. Use a whisk to combine.
  13. Add coconut oil and salt and then whisk again.
  14. Place in the fridge until cake is ready to be iced.
  15. Place all of the peanut butter frosting on the bottom layer of cake. Place the other layer of cake on top. Pour the chocolate ganache on top and spread around evenly.
  16. Optional – top it with honey roasted nuts, or toppings of choice!

But in this blog post I just wanted to talk about healthy desserts that are super quick and easy to make for when you’re craving dessert RIGHT now. And you can also have them as snacks!

Banana Ice Cream

This is such a good dessert because it genuinely tastes like ice cream! But is just made from bananas and milk. You do need to have frozen bananas ready (I ALWAYS have some in the freezer). You can also add anything else you want, but just remember that the more ingredients you add, the more calories you add too. I love adding cacao and peanut butter for a treat!

Chocolate Peanut Butter Cheesecake Smoothie

Check out this recipe for when you’re really craving some chocolate peanut buttery goodness.

Protein Balls

I know you’ve probably seen these everywhere, but it’s because they are so good! This recipe only has about 80 calories per ball, so they’re perfect for when you just need a little something sweet. And then can be made in just a few minutes.protein balls

Avocado Chocolate Mousse

To whip up some chocolate mousse, just put ripe avocado, sweetener (honey, maple, coconut sugar, etc), cacao powder and coconut oil in a blender and mix it all up. Easy!Vegan Chocolate Mousse

Choc Chip Cookies

These will only take about 10-15 minutes to prepare and cook! The recipe is quite healthy and uses sugar free chocolate chunks. Have a look at the recipe here.healthy choc chip cookies

Peanut Butter Cups

These take me about 5 minutes to make and then 5 minutes in the freezer and you have a healthy dessert in 10 minutes! The chocolate layer is made from cacao powder, honey and coconut oil. The peanut butter layer is just peanut butter and crushed nuts. This is one of my favourites!healthy dessert

Home Made Ice Blocks

These do take a little bit of preparation, but once you have them in the freezer, you can have them whenever you like! You can make them with whatever fruit you like too. In this recipe I used frozen bananas, and frozen strawberries, and you can add coconut milk, sweetener, etc.Healthy Popsicles

Healthy Chocolate

The base of the chocolate is cacao powder, coconut oil and honey. And then you can add whatever other ingredients you like! It will take a few hours to set in the fridge (or freezer if you’re impatient). Check out my recipe for this healthy chocolate here.healthy desserts

These protein superfood bars are an awesome healthy snack and great for when you’re craving a sweet treat.

Ingredients

  • 1 cup dried goji berries
  • 1 cup dates
  • 1/2 cup almonds
  • 1/2 cup cashews
  • 1/4 cup chia seeds
  • 1/4 cup pumpkin seeds
  • 7 tbsp coconut oil
  • 1/2 cup chocolate protein

Ingredients (icing)

  • 2 tbsp raw cacao powder
  • 1 tbsp melted coconut oil
  • 1 tbsp honey or maple

Method

  1. Blend all ingredients in a food processor.
  2. Place into a lined baking tin and freeze for 1 hour.
  3. Combine all icing ingredients and spread over the bars.
  4. Top with goji berries.

Makes about 15 large bars. Keep in the fridge.

These strawberry banana muffins are an awesome healthy snack when you’re on the go! Make them in advance and keep them in the fridge (or freezer).

INGREDIENTS

  • 3 ripe bananas
  • 1 cup strawberries
  • 3 eggs
  • 1/2 cup almond meal (or flour of choice)
  • 2 scoops protein powder (or 1/2 cup of flour of choice)
  • 1/2 cup coconut sugar
  • 1 teaspoon baking powder
  • 3 tablespoons coconut oil

METHOD

  1. Preheat oven to 180C / 350F.
  2. Combine all ingredients in a food processor (except for strawberries) and blend well.
  3. Stir through chopped strawberries.
  4. Pour into muffin tins and bake for 30 minutes or until cooked through.

Makes about 12 muffins.
