Healthy Summer Rolls
These actually taste like the real deal! Here’s the recipe for my healthy summer rolls.
Ingredients (chocolate layer)
- 6 tablespoons natural nut butter (I used crunchy peanut)
- 2 tablespoons cacao powder
- 2 tablespoons rice malt syrup
Ingredients (coconut layer)
- 1/2 cup desiccated coconut
- 2 tablespoons almond milk
- 2 tablespoons rice malt syrup
- Pinch of salt
Method
- To make the chocolate, combine all ingredients in a bowl and stir really well. You can warm it up in the microwave if that makes it easier.
- Press chocolate into a silicon loaf tin (rectangular in shape) and refrigerate.
- Combine all coconut ingredients in a bowl.
- Remove chocolate from tin and cut into 4 pieces (short and fat, not long and thing).
- Roll out each piece of chocolate between 2 pieces of baking paper.
- Place a thin layer of coconut in the middle, leaving about 1cm of chocolate on the long ends.
- Roll up using the baking paper to help you, kind of like a sushi mat.
- Roll in coconut. Repeat with other chocolate pieces.
- Refrigerate for 1 hour before cutting each piece in half.
Makes 8 pieces.
