Healthy banana muffins
Healthy banana muffins with walnut crumble. These are a staple of mine!
Ingredients (muffins)
- 3 bananas
- 3 eggs
- 1/2 cup almond meal
- 1/2 cup Shape Health vanilla protein superfood
- 1/2 cup coconut sugar
- 3 tbsp coconut oil
- 1 tsp baking powder
- 1 tsp vanilla
- Pinch of salt
Ingredients (crumble)
- 1/2 cup chopped walnuts
- 2 tbsp shredded coconut
- 2 tbsp coconut sugar
- 1 tbsp coconut oil
Method
- Preheat oven to 180C.
- Combine all muffin ingredients in a food processor and blend well.
- Pour into muffin cases.
- Combine crumble ingredients in a bowl.
- Spread 1 tbsp of the crumble on top of each muffin.
- Bake for 30-35 minutes or until cooked through.
