Healthy Oatmeal Cookies

These oatmeal cookies are a great healthy snack, plus they’re super easy to make!

Ingredients

  • 1 1/2 cups gluten free oats
  • 1/2 cup shredded coconut
  • 3 ripe bananas, mashed
  • 1/4 cup coconut or olive oil
  • 1 cup dried fruit of choice (I used sultanas)
  • 1/2 cup nuts of choice (I used almonds)
  • 1/2 tsp cinnamon

Method

  1. Preheat oven to 180C / 350F.
  2. Combine mashed bananas and oil in a bowl.
  3. Stir through remaining ingredients. Mix well.
  4. Line baking tray with bake paper.
  5. Place large tablespoons of mixture onto baking tray and form into cookie shapes.
  6. Bake for 20 minutes or until golden.
  7. Allow to cool completely before removing.

Makes approximately 16 cookies.
